Even with the high gravity, these came out a bit on the sweet side. Yes, dunkelweizen should be malty sweet, but these were almost syrupy. Certainly not horrible, but definitely better when mixed with a rather dry hefe.

6 lbs Munton's Wheat DME (55%/45%)
3.3 lbs Dark LME
8 oz Carafoam malt
8 oz Caramel malt (40°)
1 oz Saaz hops pellets (3.3%)
1 oz Hallertau hops pellets (4.3%)
1 vial WLP 300 Hefeweizen yeast
In 4 gallons water, steep specialty grains at 150° for 30 minutes.
Add DME and LME, bring to a boil and add Saaz hops.
After 45 minutes, add Hallertau hops.
Boil an additional 15 minutes.
Cool to 80° and pitch yeast. Ferment at 65°
Rack to secondary after 1 week.
