4.0 lbs Pilsner Malt
1.0 lbs Vienna Malt
1.0 lbs Munich 10L Malt
1.0 lbs Flaked Rye
1.0 lbs Flaked Wheat
1.0 oz Norther Brewer hop pellets (6.0%) @ 75 minutes
2.0 oz dried chamomille (about 2 cups) @ 15 minutes in steeping bag
1/2 tablet whirfloc @ 15 minutes
1.0 oz Hallertau hop pellets (2.7%) @ 5 minutes
1 pouch Lallemand Belle Saison dry yeast
Mash with 3 gallons water at 150° for 45 minutes.
Sparge to collect 5.5 gallons.
Boil for 60 minutes, then add whirfloc and chamomile.
Boil an additional 15 minutes. Cool to 90°.
Pitch yeast, and ferment at 72-74° for 8 weeks.
Transfer to secondary. Allow to settle for 2 weeks.
Bottle with 3/4 cup sugar.
