My shot at "Texas Brown Ale." Brewed specifically for BBBB 2014
Same basic recipe as Bob's Your Uncle, with American hops (and more of them). They're actually not too bad. Good hop balance with some roasty caramel notes.
I'm not normally a fan of hoppy beers, but I find myself heading back to the kegerator again and again for this one.
6.83% ABV How is this calculated?
8.00 lbs 2-row malt
2.00 lbs Crystal malt (60°)
0.50 lbs Cara-Pils
0.50 lbs Special B
1.00 lbs Dark Brown Sugar
1 oz Cascade hop pellets (7.1%) @ 60 min
1 oz Amarillo hop pellets (8.7%) @ 30 min
1 oz Amarillo hops pellets (8.7%) @ 15 min
1/8 oz Cascade hop pellets (7.3%) Dryhop 3 weeks
1 vials White Labs Burton Ale (#WLP023) yeast
1/2 tablet Whirfloc
Mash in 3.5 gallons water at 150° for 60 minutes.
Sparge to obtain 5 gallons.
Add brown sugar, stirring to dissolve, and bring to a boil.
Add Cascade hops and boil for 30 minutes.
Add 1 oz Amarillo hops and boil 15 minutes.
Add another 1 oz Amarillo hops and 1/2 tablet Whirfloc. Continue boil for 15 more minutes.
Cool to 80°, then pitch yeast.
Ferment for 4 weeks at 73°.
Transfer to secondary and add 1/8 oz Cascade (7.3%) pellets.
Let settle an additional 3 weeks.
Bottle condition, or keg @ 36°/12psi
