Brewed specifically for Beltane 2016.
A little spicier, a little hoppier, and certainly taking me out of my comfort zone, this brew seems innocent enough at first, but just wait until nightfall...

Ingredients:

8.0 lbs 2-Row Pale Malt
1.5 lbs Rye
1.0 lbs Carapils
12 oz Crystal 120
12 oz Aromatic Malt
6 oz Crystal 60

1 oz Challenger Hop Pellets (7.2%) @ 60 min
1 oz Challenger Hop Pellets (7.2%) @ 30 min
2 oz Simcoe Hop Pellets (11.6%) @ dryhop

1/2 tablet Whirfloc
1 pouch Wyeast 1056 (American Ale)
.75 cup table sugar for priming

Directions:

Mash in 3.5 gallons water at 150 for 60 minutes.
Sparge to collect 5.5 gallons.
60-minute boil:
     1 oz Challenger for 60 minutes.
     1 oz Challenger for 30 minutes.
     Whirfloc for 10 minutes.
Remove from heat, cool to 75, then pitch yeast.
Ferment at 50 (Yes, 50) for 3 weeks, then 70 for 2 more weeks.
Transfer to secondary, add Simcoe dryhops, and let settle at 70 for 3 weeks before bottling.
Bottle and store for at least 1 week before chilling.
